Carrot and Raisin Salad

Carrot and Raisin Salad

10 oz shredded carrots (shredding them yourself fresh will give you a better finished product)
1/2 cup packed raisins
1 oz lemon juice (add a bit of lemon zest if using fresh lemons)
1 TBS sugar
3 TBS mayonaisse

+ Mix all ingredients in a bowl and stir well.

+ Allow to set up for at least 3 hours in the fridge before serving. Overnight is better. It makes a HUGE difference in the taste. The raisins will soak in the dressing and plump up.

This recipe made 5 servings at 127 calories per serving. If you use more or less per person this will change naturally. Its a great healthy, fresh and refreshing dish.
